A Quiet, but Exhausting Weekend

Finally! A weekend as I enjoy them...almost. Let's say I'm 85% full relaxed and peaceful. Coffee, morning soccer and getting back to some writing. The 15% is due to the muffler on my car having rusted out. I'm pretty sure I just redid most of the exhaust within the last couple of years so I'm a little perplexed that this muffler (well really where the pipe attaches) went so fast. Oh well.  The car has 260k miles on it so in reality I've been looking for the next. I'm rather stubborn though. I really enjoy not having a car payment as well as a vehicle I know how to work on and gets better than 30 mpg. I also enjoy driving a stick shift :). Similar to writing in cursive, the manual transmission has become something of a novelty these days. This is too bad as they are fun to drive; with the exception of when sitting in traffic (the key is to leave lots of space). A Most Satisfying Breakfast

One of my weekend loves is being able to cook a hot breakfast for myself. Here's what is becoming a favorite creation. Shredded zucchini hash from the garden. I cook it in a little butter, minced garlic a touch of salt and pepper and dehydrated minced onion. Zucchini has a high water content so I wring it out and even drain the pan during cooking. I then cook two over-easy eggs and several cherry tomatoes, cut in half and fried cut side down flipping towards the end until the skin is loose. I sprinkle over with a little feta cheese and add in some fruit (raspberries today) and of course my old friend coffee . :)

An Ode to Coffee

I don't know where I'd be, without your dark and roasted bean and let's not forget the caffeine You pick me up in the morning But keep my up and moving Insides churning, outsides grooving And I take you with a little cream Who am I kidding, a lot of cream And need constant refill it would seem If there there's no Coffeemate to be had Then on to the half-and-half and with a touch of Splenda you taste splendid Although I'd drink you straight from the carafe I used to use a Keurig  machine But I found the portion quite lean So now on the weekend I make a full pot Still that doesn't last as long as I thought In the evening I switch to decaf So I can sleep at night Then awaken again tired and groggy Until I pour another caffeinated flight ©2016
