Quick (Greek) Salad


This food science experiment seemed to work out ok for feeding two people:
  • One medium Tomato, seeded and diced
  • Three baby bell peppers, seeded and quartered length-wise
  • 1/4 of a medium red onion, coarsely chopped
  • 1/2 of an English Cucumber chopped
  • 1/4 cup Kalamata olives
  • One head romaine Lettuce, chopped
  • 1/4 cup Feta (optional if cutting dairy)
  • 2 Tbsp Extra Vigin Olive Oil
  • 1 Tbsp Balsamic vinegar
Combine first five ingredients with oil and vinegar. Add lettuce and toss until coated/mixed. Top with olives and feta. Enjoy!  

I made this along with grilling kabobs, acorn squash, asparagus and some pineapple for dinner.
